STORY BEHIND THE CUP
Liliana is the name of the producer and she owns and runs the farm with her husband and this exceptional cup is the byproduct of years of care and investing in local infrastructure. Liliana began growing coffee twelve years ago, and since then they have been improving to the point of entering the specialty coffee market.
Castillo variety was a hybrid cross developed by Cenicafe (the scientific research arm of Colombia's National Federation of Coffee Growers) to replace the no-longer-coffee-leaf-rust-resistant Variedad Colombia; released in 2005.
BREW GUIDE
Pour Over
Hario V60 2 Cup
Dose: 15g coffee | 240g Water at 95°C
Step 1 (0 minute)
Start your timer before pre-wetting your ground coffee. Pre-wet (Bloom) with 30g of hot water and wait for 45 seconds.
Step 2 (45 seconds)
Gently pour 100g of hot water in a circular motion. Let the coffee steep for 60 seconds.
Step 3 (1 minute 45 seconds)
Pour up to 240g at 1 minute 45 seconds, then swirl once the pour is done. Enjoy your brew!
